 how to broil and roast

In 1967 I discovered that
ALL broiling smoke,
splatter, flare-ups, and scrubbing was
 caused by the ill-conceived broiler
 pan that came free with my oven. 

By watching a hamburger broil
 on that hateful pan, I discovered that
all the smoke and splatter and flare-ups
came from drippings that puddled on the
"good"  heat conducting sheet metal rack.
Most racks on broiler pans are made of
porcelain covered steel
(NOT stainless) or aluminum 
which are  "good" heat conductors
which make terrible broiler pans.
Everything about that hateful pan is wrong.
  Good heat conducting metals get
  HOT quickly and they smoke and splatter
 the drippings that touch them.

A few drip holes in the
sheet metal racks that are
 common on most broiler pans are
thoughtless.  Only a small amount
 of the drippings can drip through
the small amount of holes.

This simple discovery led to the
 invention of the
WaterBroiler - WaterRoaster Pan.

I decided to make
 my broiler pan AND Wire Rack out of 
"poor heat conducting"
 18/8 Stainless Steel
 to keep the pan and rack
as cool as possible.
Obviously the pan and rack
 get too hot to handle
 with your bare hands, however,
 they do not get AS HOT as quickly
 as "good" heat conducting metals.

The wire rack is also essential
 to allow virtually ALL the drippings
to instantly DROP into the pan
away from the rack.

After having a protoype pan made,
 I discovered that putting cold tap water
into the drip pan before broiling and
 roasting had a great benefit.

The water captured the drippings
 and prevented the drippings
from sticking to the bottom
 of the pan and the water
did NOT steam the food.

Later I found out that the
 water made a profound
 difference when roasting.

  The water evaporated slightly
 to keep the food succlent
 but did not steam the food.
 The food browned beautifully. 

Because water is part of the secret,
 I decided to trademark my pan the
WaterBroiler - WaterRoaster Pan
but the design of the pan
and rack is the main secret.

Putting water in your hateful
broiler pan accomplishes little. 
Water makes the pan itself
 a little easier to clean, but water does
not prevent smoke and splatter
 from the sheet metal rack.

Both the Pan AND Rack are made of commercial
18/8 stainless steel.  Together, the pan and rack
weigh almost 2 ½ pounds.

The sturdy pan will never warp.
The sturdy rack will never bend.

The 12 inch diameter round pan and slightly
larger round rack are large enough to hold 5 or
6 hamburgers, or 12 very small lamb chops, or
 a 10 pound turkey, or a rib roast large enough
 to serve eight, or even 9/10th of a whole ham
 if you have your butcher cut the shank end
 off so you can stand it up on the rack.
(Be sure your oven is tall enough to
accommodate the ham standing up.)

The pan is 1 1/4 inches deep.
The removable 18/8 stainless steel  wire rack
fits on TOP of the pan to keep food elevated
for better roasting and to leave room in the pan
for water and drippings. The wire rack won't
 slip off during use because it sets down
 1/4 inch around the perimeter of the pan, but
it can be removed instantly by lifting up.

The pan and rack will fit IN your divided sink,
IN your dish-rack, and IN your dishwasher.  
 
Two large 18/8 Stainless Steel handles
are welded to the pan to make for safe handling.
Some ill-conceived broiler pans have
 the handles on the rack!

The pan is highly polished to a heat reflecting
mirror finish. The wire rack is electropolished
to a smooth mirror finish to impart a
"non-sticking quality" to the
 18/8 Stainless Steel wire rack.
